Tips on storing

Hi, does anyone out there have any tips on how to store beetroot? We have a great crop this year but have had to take up so avoid bolting and we really dont want to pickle.

I grow potatoes in bags. I store my beetroot in the dry compost left after I've lifted the potatoes.
