Stopping determinate/bush tomatoes

I've pinched out the growing tips of all my cordon tomatoes (per the advice given on the other thread), but what do i do about my bush tomatoes?

They're still sending out shoots and trusses in every direction and are abundant with full-sized green fruit (none have yet ripened or even begun to blush).

I've read that bush tomatoes will stop of their own accord, however, with the days becoming shorter and cooler, i'd really rather force them to ripen their existing load - how can stop the growth of new shoots to encourage this?

Once it gets to this time of year (when I want them to ripen rather than grow more) I get quite harsh. I stop all sideshoots above a truss (leaving one leaf above it) and take out all new sideshoots (you have to do this regularly) and take away lots of leaves to allow a greater airflow through the bush (against blight).
