Saving seeds - how do I know if my plants are hybrids?

Hi there, I'm thinking of trying to save seeds for the first time. However, I've been looking at the packets of seeds which I grew this year's veggies from, and I can't tell which of my plants are hybrids and which are open-pollinated.

Sadly I didn't have seed-saving in mind when I bought the seeds so was not looking specifically for open-pollinators!

Do seed packets have anything on them that I should be looking for? Is there another way of working it out?

Generally the packets will say F1 before the name of the variety if it's a hybrid seed..

Depending on how many seeds you've collected might be good to list some (or types at least) so people can tell you how prone to undesirable crossing? Some things are very prone to inbreeding and generally produce true to form seeds if they weren't hybrids to begin with. Sure I saw a post about it, or someone put up a link somewhere about it, will see if I can find it..
