Can anyone give me some advice on saving my own leek seeds.

I have one already with a pod thing on the middle stem but not sure where to go from here.

The pod thing may well be the flower spike - you need to get from there to a drumstick flower head and then the seeds which are black in the centre of each floret on the head.
Whooops - now what are the dogs getting up to?

        Well, in all honesty....

If it was from this year's sowing of seeds - then don't use it.....if it is from last year's sowing of seeds then it needs to have flowered now and set seed; inside each pod the seeds should about now be black but just not dried out yet.....if they aren't black then it's a right palaver getting them to go black so late in the season without them rotting on the stem.

I've just collected (well, sprinkled) the seeds from my saved onions. They've been flowering all summer and have somehow managed to withstand the gales (they're surrounded by bean wigwams so that will have helped shelter them).

I didn't label them, and I know I'll forget to label where I sowed them ...

My welsh onions flowered this year and chucked their seeds everwhere. I've got skinny onion plants all over. Much better germination than bought seeds - I suppose that's because they were so fresh. I'll harvest the ones that are growing in the woodchip paths first I think
