From the date that a Cauliflower is ready for picking you have two weeks (as a generalisation, it will be longer in Winter when its cold) to pick the crop before it is no longer any use
So don't sow more than you can eat (or are prepared to freeze) in a two week period, and sow some more little-and-often so you have them throughout the season.
