Harvesting Lemon Grass

I need to use a couple of stalks from my lemon grass, do I just cut it off with a sharp knife a bit like cutting asparagus?

Yes, apparently if you do that it will send up new growth.

Forgot to water mine, and it just looks like ordinary dried grass. Will it be any good?

tbh haven't a clue, doesn't sound good .......when you buy it in the shops they are nice fat stalks .
