I've just sown four varieties of beetroot, direct in the ground, to replace the early spuds I harvested last month. It's a bit late, but I believe beet grow quite quickly, so hopefully they'll produce a useful crop. I've never grown beetroot before.

To answer your second question: beetroot will survive night frost, but generally not when it gets really cold. You can dig them up in October/November and keep them in a box of damp sand or even soil in a frost free unheated space until spring.
When you notice them bolting you can still eat them at that point, but as mentioned if you leave them to go to seed they will become woody.
You can also bottle them in a pressure cooker in glass pots with metal lids screwed on tight. Let the pressure cooker depressurise in it's own good time. This takes less energy than freezing. Eat any pots where the metal lid is not sucked down (they will keep in the fridge for some days). Bottling in an oven is not recommended for food that isn't acid.
