I have a numex twilight pepper plant. I'd like to save seed from it, but at what point do I do that? Do I need to wait till the peppers are red? And if so, how long after they turn red?

I leave my peppers on the plant till they are ripe and then string what I don't need to use fresh into ristras. I hang these from the curtain track in my kitchen and they dry out nicely. I use the dried chillies for cooking but an added bonus is that the seeds ripen and dry inside them. Once nice and dry you can just cut off the tip and shake the seeds out.

Really wanted to make ristra this year but I have no chillis growing, all germinated too late then I fried them in my blowaway all because the 'git' played up and I could get to the lottie for a couple of days when the temperature was 30 odd degrees
