    I got an allotment earlier this year and I have just two courgette plants, but even I have a glut

    After doing courgette fritters and used it in pasta sauces until my ten year old daughter refused to eat that again, I found this little gem:

    It is JUST amazing I had a friend over for tea, and she loved the cake and she refused to believe that the cake had 500ml of grated courgettes in it until I showed her the stumps of the courgettes lol

      I grow lots of other stuff too (I just realised it sounds like all I have on the allotment is two courgette plants lol)

          You know you have a glut when Ma refuses to make any more courgette sabji, or runner bean and pea sabji. She also elbowed me out the way when I decided to make chocolate courgette cakes. We ended up with spicy fruit muffins. I mean, where's the justice in that....

                I'm going to have to spend the day in the kitchen tomorrow dealing with stuff.......I want to make some more beetroot and mint jelly but it needs apple juice......a tree full of apples but no juicer

                  I know when we have a 'glut' of courgettes because they think it doesn't matter if they eat a whole jar of relish in one sitting - because there'll be another along very soon!

                    made the lemon courgette cake recipe posted earlier - whole office loved it! chocolate one next but I am intrigued by the savoury ones with feta - must search for a recipe

                      after much deliberation my mountain of courgettes in the fridge is going into my courgette chutney recipe ....it has a seal of approval from someone high up on the vine

                            My aunt always makes soups and then freezes them in bags or sometimes ice cream tubs to save on space - it all packs in tight. Vegetable soups can be really healthy too, here's a nice tomato soup recipe which is more or less what I make now.
