Hi, when I dig up my Jerusalem artichokes I just chuck one medium sized tuber back in the hole to grow next year. They are very hardy; once you've got them in open ground you find them popping up all over the place!

Yes, they should be fine. Alternatively keep them in a box of dry compost for a couple of months and plant out in Feb/March.

As Katiegr says, once you have them, you have them for always, they just keep popping up.

      A wonderful vegetable, much under-rated.

They are winter-hardy once they're in, but beware of chucking them in cold wet soil for months on end: they could rot.

If your soil is claggy, I would wait until early spring.
