Depth of potting on/planting

I know with tomatoes one pots them as deep as possible - up to the first true leaves if it has any, curving the stem around the pot if necessary. And I know with single leaks they go in 3-4 inchs deep. But what about everything else? Is it better to plant slightly leggy brassicas a little deeper to give them more support? And if trying the pinch per module idea for leeks is there any sense in planting the clusters a little deeper?

Alternatively, are there any veg that don't like to be planted deeper?

Personally I plant everything at least up to the seed leaves, though others may do it differently.

Mr dwarf beans are leggy (i think!) from being in the window would they be ok to their seed leaves? I pot on everything else deep but these look healthy apart from the fact their seed leaves are 4 inches above the compost... :/
