  • How to cook bolting onions?

    It's all Boltimore here My Radar and White Globe autumn sets are bolting, an old hand next to my allotment told me that this happen often on this plot (ex quarry land so well drained stony lome).

    He suggested to chop the bolting buds and let the onion grow, once harvested and come to use simply chop in half and get rid of the hard core. Is this something anyone ever done? do you get the same flavour from bolters?

    Also, can I cook the thick green flowering stokes I removed?

    I would imagine you would cook them pretty much as all onions. Like you say remove the flower head than when you pick them slice them in half, remove the core and chop as normal. This also can happen to leeks so the same principle applies.

        bolting onions can be cooked in the same way as any other onions .... i think they won't store well tho .... i've never noticed a hard core from my onions that bolted, but then i tend to pick and use onions when they start to bolt rather than leave them to grow longer ....

          Use them first - so when you harvest make sure you know which are which.

            Onions that have started to produce a flower can be used in exactly the same way as those that haven't. I've picked off the flower buds and will leave the onions for a bit, no need to lift them yet.

            Scapes refers to garlic flowers as far as I know, not sure about using onion flowers in the same way.

              See in the article at the last post from me, it said to use some screening when tossing onion scapes into hot oil as they are much jucier (my ones certainly do) and can send splatter all over the place.

              I am not lifting mine either, I'll follow the old hand plotter advice and throw away the core from fully formed bulbs.

                The longer you leave the bolting onion, the wider the core and thus the less the 'normal' onion bit - I've found. I pick them as soon as they look like they are going to bolt and use them the same day.
