chilli's are perennials - but they can easily be killed off by frost

They're perennial in their native S.America, and cold will kill them, not just frost. They need to be above 10c at all times

As to heat, it depends on lots of things: climate, feeding regime, watering etc. Even different fruits on the same plant can have different heats. The tip of a chilli is the coolest, gaining heat as you go up to the shoulder (where it joins the stem).

Green ones, as Chris says, aren't ripe and don't have the heat.

I have a couple of cayennes. They are both almost 6 foot tall now and have pods galore.
My first ripe pod of the year is a cayenne.
Mine also go darker around the joins of the stems

As for heat, they are mild as. If you like spicy you'll be wanting to add a few at a time into your food.

so where am i going wrong, started mine in doors then to a plastic cold frame and there not even a foot tall........

Mine are about 2' in height and 18" in width - pretty big this year, with masses of fruit on

My tip to overwintering chillis is don't bin them when you think they look dead, I did that the first year then this time I resisted and eventually new growth started and now they have pods on.

The biggest is 6' from floor to tip and still growing. I really need to pinch it out as it has started growing across the roof now!

I have the same of most of my Pepper and Chilli plants. I think its because they are quite solid woody plants when they grow. I have a Scotches, Apaches and Medina Chillis and all go like that also scotch bonnets seem leggier.

A lot of chilli plants grow big if allowed to. I've seen some monsters on chilli forums!
