Have you got it covered with its own leaves against the sun? One of mine went purpley and then brown because I didn't tie its leaves over the curds.......
If the river hasn't reached the top of your step, DON'T PANIC!
It seems to me that it is just being a cauliflower, most cauli's were originally coloured in some way or other. Make sure no light can get to the curd and a foliar feed may help.
