My radishes have bolted. I know with beets you can still eat the root, but with onions etc. it starts to go a bit wrong. Where do radishes stand? Can you still eat the roots or are they woody and it's just best to wait for seed pods to eat?

When raddish bolt the root goes hollow and becomes very woody to the point of being unedible.
Throw em and plant more.
