Woody celery

I have harvested some celery today. It was a good size and I was quite pleased for a first attempt. It tastes good but it is quite woody and tough. Any ideas why this might be? My ideas are it should have been harvested earlier or it needed more water.

One of my books seems to indicate that it's lack of water, although how on earth this happened in the summer we've had I have absolutely no idea.
