Newbie tomatoe trusses question

Hi there, Please feel free to re-direct me if this is the wrong place.

I really need an idiots guide to what exactly the truss is! (I know sorry I must sound so thick!) and when I should get rid of what and where and how!

I have various plants, all going really well but 2 of them I reckon might need me to get rid of some stuff yet am not sure what. Googling has left me confused as to what is what.... (the main one is a Roma and also something called Big Boy)

Idiots guide please?? Pretend I am 5 years old... that kind of thing.
