Hi. I'm fairly sure that least year I read on here that someone freezes beetroot in chunks without blanching it first - am I right, or is that just wishful thinking? Normally I'd blanche all my veg before freezing, but why waste the energy if it's not necessary..?

I must confess I rarely blanch anything,I freeze baby beets whole an the larger ones sliced,they do come out a bit squashy though but then so do the blanched ones .I prefer to pickle themLast edited by snakeshack; 17-06-2013, 09:06 AM.don't be afraid to innovate and try new things

Cook them and slice them before freezing, works well but I prefer to pickle them or store the larger roots in sand at the end of the season.Gardening requires a lot of water - most of it in the form of perspiration. Lou Erickson, critic and poet

So you cook them first roitelet? And then freeze them? I did store a few in sand last year, and it worked quite well except that I found half of them sending up nice new growth from under the sand! Not sure what I did wrong there...sigpicGardening in France rocks!

I prepare them as for serving cooked and cooled,place in a strong bag in the freezer,they loose a bit of flavor and texture,but not a lot,either let defrost over night,gently microwave,or roast in the oven,sigpicAnother nutter ,wife,mother, nan and nanan,love my growing places,seed collection and sharing,also one of these

Have you tried pickling them in sweet vinegar? I don't care for beetroot pickled in normal vinegar, but sweet vinegar I find transforms them into a delicious addition to a salad..

Not tried that no Capsid - I don't really eat any pickles... used to like the pickled onions my mum made (awww ), but I've never really found any other pickles I like. Maybe it's time I expanded my horizons a bit . I'm sure my neighbour said she pickles beetroot - I feel a swop coming on! I'll grow some beets, and she can pickle them for me .sigpicGardening in France rocks!

OK here's what I do for freezing..........
Cook them , peel them and freeze to either puree and use in choclate and beetroot cake or chuck straight from frozen into hot oil to roast......
For beetroot that goes in chutney or suchlike I peel and either cube or grate then it goes in the pan and is cooked from frozen......
I find if you think about how you intend to use a veg and freeze it in a way ready to be used it is fine.......and I never blanchS*d the housework I have a lottie to dig
