  • Am I mad???

Why do I have eight Courgette plants on the go??? Picked Four on Satdee and another three today. There's only two of us and My Mum doesnt want any... think I'll have to resort to dumping them on neighbours doorsteps and running away!

What have you planted too much of and what can you do with excess courgettes???

Here's me thinking that my 5 plants were a lot
I do love courgettes and eat them most days in either a salad, stir fry or omelette plus they are good pickled.
      Location....East Midlands.

As well as all the other ways of using them above. SWMBO slice's them, bangs them in the George Foreman for a couple of minutes then mixes half and half with either calabrese or cauliflower, covers this with a rich cheese sauce and freezes.

Great on its own, better with a Sunday lunch.

I also chunk and freeze for roasting, grate and freeze ready to go in cake or slice and dry to crumble into stock powder or just into pasta sauces.

My favourite way to eat them is, finely sliced on the diagonal (to make great big ovals), dipped in flour and water batter, fried and sprinkled with parmesan. Just count those calories.............

I made Happiness Soup today with some of our yellow courgettes, for me and 8 volunteers at the gardens. Fantastic! It's the main reason I grow the yellow ones.

Eight is pretty impressive! I've cut down from 4 last year to just two this year plus a couple of patty pan plants.

I think I may have gone a bit OTT on winter squash though with 4 of the little bush type plants which produce acorn type fruit, 6 x Hunter butternut squash and 2 x Jack Be Little mini pumpkins... only the two of us!

This looks amazing and I'm very glad that one of the random courgette seeds I sowed earlier this year was a yellow variety!

The first decent sized one when into a curry OH was making when I got home from the plot yesterday but the next one is going in that soup!

Drying them?! I like the sound of this! Do you have a food dehydrator or do you use more rudimentary means?

Boring old Frittata for I. I live on the stuff once the cougettes are ready. Nice hot or cold. By using my own chooks eggs costs me nothing to make either.
