Amaranth Hopi Red

Hi all
Has anyone planted amaranth Hopi Red for its leaves (to stir fry). If so do you think I could sow these now to use tender leaves for stir fry? I have seeds which suggest planting under glass on in a window silk in mat and past that directly. Does not say how late I could sow them.

All just to let you know that I had some lovely amaranth leaves to eat 4 weeks from sowing. Definitely sowing these again next year!
