My first year at growing beetroot, we had a few earlier in the season, which were nice, but my second sowing have all bolted, would they still be ok to eat or are they destined for the heap?

I would think that like anything else thats bolted they will have a fibrous central core. If they are large and you can be bothered, there will should be quite a bit of edible meat around this central core?My Majesty made for him a garden anew in order
