You can use any onions for pickling, but usually smaller ones or shallots. Paris Silverskin is a small round white variety.

I just use vinegar....works for me.

I am growing some Cornichons and assumed that pickling them would simply entail Cornichons + Vinegar + jar . . . on reading some of the recipes it seems like a lot of effort I will have a go though, none the less.
