Well, a lot of gardeners do sow "unripe" seed - Monty did a bit on it on a GW episode.. the germination rate is probably lower, but I'm sure some will be viable, if they've actually matured into seed.

If it were me (and you haven't already) I'd pick it now just in case it goes missing and let it ripen somewhere safe in the house. Tomatoes are able to ripen their seeds once picked, although perhaps not the best way to save seeds. As long as you let it fully colour up and perhaps start to soften you will be able to save viable seed. Seed viability is more of a problem with under ripe fruit as seeds haven't fully developed and hardened their outer seed coat.
      Hope you keep them going

Just thought I would resurrect this thread on a high note.
I took the large tomato off the vine and ripened it the best I could on the windowsill. It still didn't ripen fully and stayed a greeny yellow colour. Once i noticed a few spots starting to rot on it I said " Thats it, its now or never" I scraped the unripe seeds out and dried them in kitchen towel.
I finally got round to sowing them last week...........and guess what? they've germinated on the kitchen windowsilll.
So now, hopefully my precious beefsteak tomato will give me a crop this summer as well!

Glad to hear it worked out for you. Oh, the life of a gardener. Don't forget to save the first lot of seeds when your tom ripens, then you can eat the rest without any worries.

And when your back stops aching,
And your hands begin to harden.
You will find yourself a partner,
In the glory of the garden.
