Carrot and celeriac pickle, delicious with absolutely anything savoury, or just on its own in a sandwich

We grow it, it's a big feeder and needs to be kept very well watered so should be suited to Co Down. Once they start to swell keep the bulb bit above soil level and keep pulling off the outermost leaves to get the knobbly effect. The leaves are a lovely addition to stocks and soups or if you have too many just dig them back into the soil.
Goes really well crushed with butter and served as a bed for white fish cooked in smoked bacon.

I tried it - thought it tasted like soap!
You may say I'm a dreamer... But I'm not the only one...

I'm an official nutter - an official 'cropper' of a nutter! I am sooooo pleased to be a cropper! Hurrah!

I've had real trouble getting hold of it in UK supermarkets even though it's a common vegetable in most of Europe, so I'm growing it myself this year! I use celeriac in soups (especially pea soup) but have also eaten it sliced 1cm thick and fried in a little bit of oil as an alternative to potatoes. It's a really filling winter vegetable and I love it!
Our Tesco always has celeriac in. Asda doesn't
