It will be to do with the chemistry of the coloured molecules which make these veg different. When they are heated the coloured molecules will decay either into something green or into colourless parts leaving the underlying green visible. I suspect it is the 2nd of these. Purple colouration is known to "mop up" free radicals - that means that it is a fairly reactive molecule itself, so it is not really surprising if it is destroyed by cooking.
Picked my aubergine today - the plant has suddenly started looking extremely sick (it was a little wilted yesterday, today it looks half dead).
