What do you think about these shallots. There seems a lot of top growth or am I worrying too much!

Don't worry more stems mean more shallots, as a general rule planting larger shallots will give you lots of smaller shallots whereas planting small shallots gives you a few large shallots. -
They look perfectly healthy to me!
