I dried some last year to make in to chilli flakes to mix with salt - just laided them out flat on a tray and stuck them in the airing cupboard. But i know you can also thread them and hang them in the kitchen to dry out.
If you dry the chillis in the sun they will keep for a year or more. You have probably seen the huge strings of peppers hanging around people's doorways in Italy and places like Espelette in the Basque country. You can do this on the slats in a sunny greenhouse if there are several sunny days in succession, or use a food dryer.
My wife also cuts them (and peppers) into strips which she freezes on a tray and then bags up loose for the freezer. These are great for stews and things in winter.
Bottling peppers is one of the best ways to preserve them with proper preserving jars and lids, but you MUST follow the instructions very carefully to avoid the danger of botulism. Peppers preserved this way are certainly tastier than from any other method we have used.
Chillies get either frozen, pickled , dried in the dehydrator , hung up in the window to dry on thread stitched through the stalks or hot smoked and dried in the dehydrator for that fabulous smoky chipotle style taste. Most will keep for a year in an airtight container when dry.
You can also make a fermented chilli sauce like Tabasco by using salt , although I don't know how long it keeps.

There are lots of great ideas above but I just string mine up in the kitchen as they look so decorative and last until the next ones are ready the following year.
You could also store them in white wine and vinegar, italian stylee. I ask my mother every year for the recipe, she tells me, then I forget.
Something like blanch them in dry strong white wine, then drain saving the liquid, then mix half and half white wine with white wine vinegar vinegar and bottle up.
The first thing I'd do is leave them on the plant. If you get enough peppers to be able to store then well done, much respect to you! For chillies, I leave them to dry on the plant: if over wintering, then just this and I'll pick them just before I put them back out. If not, I'll cut the whole plant at the base and hang upside down.
