Noticed several of my Leeks had put up a flower spike. I pinched this off. Any advice if this is ok or should I pull and eat the Leek now it's put out a flower

Yes, or freeze it for soups/stock etc.
OR
You could have grown mini leek clones - by letting it flower and then cutting the flower heads off with scissors - they'll throw out mini leeks in place of the flowers -
Loads of threads here on it - leek grass is what you want to look for.
