I grow ones that should be purple although they do fade rather on cooking, are you sure that it's not meant to be like that? I wouldn't worry too much either way, they can discolour and worst case scenario is that it might be bitter, it won't do you any harm.

you need to tie the outer leaves over the head to blanch the curd or this will happen every time you grow cauliflower. the other option is grow self blanching variety. ttfn
