Fennel question

Hi

I have grown florence fennel this year (only my second year on the allotment and last year was pretty dire so I am definitely a novice), but made a basic mistake and didn't thin it out. It is about 2 feet tall now, can I still thin it out and can I eat the thinnings?

I reckon if it's that tall, it's probably bolted. Mine did that too and I thinned when they were very small, no more than 6 inches high.

If they bolt, you can still use some of the bulb, but parts of it will be woody. Pull one up and see what it's like.
