Mr only ever parsnip

Last year none germinated. This year I pre germinated around 50 seeds about 7 appeared above ground but a few weeks later only 1 left, I just dug it up as the top growth started crowding my cherry tree and found this

any ideas what to do with it?

You meanies! Good going for the first ever germinated I'd say! I have millions of parsnips this year and so far they've all looked like that. Still really big and still taste great though. Isn't it what's inside the ugly veggies that counts? (Trying to save myself here).

Simon, take no notice. Give it a good wash, cut of any roots that are not edible & enjoy every mouthful of the rest.

I grow white gem. They are a shorter variety of parsnip (though quite broad so a good size when lifted) which means they are less likely to fork. Germination is a pain with parsnip...they like to be kept damp. Give them a good soak when you sow and always use fresh seed.

.....just noticed that you said you pre-germinated them? They don't like being transplanted, same as carrots, if you want to try pre- germinating..fill some kitchen towel tubes with compost and the minute they have germinated, plant out, tubes and all, trying not to disturb the roots.

Cheers guys, made me laugh. When I said pre germinated I meant just until it sprouts on kitchen paper.
