  • Achocha Fat Baby

I sowed some Achocha "Fat Baby" seeds for the first time this year, planted two seedlings out at the end of a bed of melons in a polytunnel. I thought they had been smothered by the rampant galia melons, however today while picking some melons I found that the Achocha had trailed down the side of the raised bed and fruited along the channel between the raised bed and the plastic. WooHoo! Loads of spikey little lime green fruits but what to do with them
raw or can they be cooked
    any ideas?
    Cheers

I like them in sliced in stir frys or fried in a little butter as a veg side dish

    My kids eat them raw.

While you can eat 'em raw, if they've been there a while, I wouldn't just bite in to them though- word of warning, they do fill with hard seeds when they get big (I've had a few that were really quite small and still full of unexpected crunchy bits). Chop 'em in half and check first!

I only eat them raw if they are small. When they are bigger/hollow we use them in omelettes, stir-fries, chillies - anywhere you would use a green pepper but with the plus that they cook so quickly. Am stir frying with tomatillos, tomatoes, onion and leaves from root parsley. Delicious.
