Shallow rooted veg?

I have some lovely up cycled planters which were used to transport glass in on trucks.
They were fine in the summer for bedding plants this year but im wondering what veg I could grow in them next summer.
The only down side to them is they are quite shallow and narrow. I would estimate they are 1m long and 5" deep and 5" wide.
What can I grow that have shallow roots. I had an idea of doing a herb bed but I have 4 planters in total and would love to use them all.

I have never grown them but perhaps ball rooted carrots?

I think 5" will be ample for most leafy veg, Peas & Beans, Beetroot, Onions. Obviously no good for Parsnips, Carrots, Spuds but you should be able to grow lots of things.

They should also make good strawberry planters.

Lettuces and radishes don't need a huge depth.

Just as forewarning, my stumpy carrots couldn't cope with that depth and came out with more legs than a spider.

I was thinking that walking onions might do all right in these planters.
Does anyone know where we can find some.

I used to grow them in South Africa. Been Living here in UK for four years now.
Would love to get some of these again. They might also be known as Egyptian onions.
