Purple Sprouting Broccoli - how long till harvest?

Do you take the main one and a few of the side spears? Basically the top 4 or 5 inches?

I took the main one and a couple of the larger side spears. This really does stimulate the plant to produce more. I am harvesting several spears every day at the moment and have three plants. Tastes fantastic.
