Jerusalem artichoke

So I planted Jerusalem artichoke this year but don't know what I'm supposed to do. They are growing very well and are currently higher than 6ft...

How do I know they are ready to harvest and typically what month would that be?

Typically it would be the opposite month that I would find them mature. I didn't even dig mine up.
It appears that the wombat is into digging up root veg for me

Coopers I start digging mine around November time leaving one in the ground each time.

I dig them when the foliage starts to die back. They will keep in the soil for yonks.
