I've heard the best time to harvest them is after a few frosts. I have quite a few of them currently doing well in my garden and was just wondering, after the first couple of frosts do I pick them all and store them or is it OK to just keep going out and pulling them when I need them throughout the autumn/winter.

They are very hardy and can easily survive all winter in the ground. As Scarlet says, it can be a problem digging them out when the ground is frozen solid, so you might want to dig up a few to keep in reserve when you're expecting the coldest weather.

If they are in your garden, during frosty weather, take a kettle of warm water with you & pour round the root you wish to pick. I've already pulled a few of mine, and they taste great even before the frosts have arrived . I think they're supposed to taste sweeter after frosts? But I'm quite happy with the taste now. The shapes, however, are a different matter! LolsigpicGardening in France rocks!
