Quite a few of my beautiful sweet corn plants have been attacked by something. The silks are being eaten right down to the cobs. What could it be? slugs, snails, or mice?

I have invisible caterpillars on my beetroot. I had the same thing with chard last year. The droppings are there clear as day, and its definitely not slug poo, but I've lifted every leaf and checked carefully, and there is nothing to see.A life is like a garden. It's probably earwigs.
Open one of the husks, they'll probably be hiding in there. An upside down small plant pot, stuffed with straw and placed on a cane is a good method of dealing with them (organically). You can dispose of them in the mornings as they go into the pots overnight.

I had earwigs of mine - lots and lots of little wiggies.
