    I've just realised the zebrune shallots I picked a few weeks ago are putting out new green shoots where I cut the tops off
    Have I messed up and should have left the tops to wither before I cut them off?

    What did they look like when you lifted them? I wait until the tops have bent over and and and starting to wither before lifting them. Then I leave them until completely dry, by putting out in the sun (ha ha) or on the bench in the shed. Only then do I remove any loose outer skin and string up. I've only had trouble with onions or shallots re sprouting when it starts to warm up in the Spring.

      My zebrune shallots (sown Jan 1st) have been bent over for a while now but continue to bulk up at quite a rate. Its my first year growing this variety so I'm certainly no expert but I think you may have lifted yours a little early.

      I suspect that your shallots won't store very well if they're trying to sprout. When I have had that problem with onions in the past, I sliced and froze them (open freeze on a tray and then put in a bag to make them 'free flow') so they kept better.

        I chop and freeze any onions that are starting to sprout if I can't use them immediately. They are really useful if you are wanting a quick meal, as you can cook them straight from frozen.
