Has anyone ever made homemade chipotle peppers? As I understand it, they are smoked jalapenos. Investing in a house with an ingenook fireplace so I can hang garlands of chillies next to hams in the chimney to slowly smoke seems a little over the top so does anyone have any slightly more practical ideas of achieving that rich deep flavour of a chipotle?
