Should my beetroot look like this?

If it is Beetroot Barbietola Di Chioggia then yes I suspect it should.
Slice it across the beet and it will give circles.
May be other varieties that produce the same I guess.
Moreveg sell it and have a picture of it sliced horizontally:

I grew two beetroots last summer - Perfect 3 and Chioggia. The latter didn't seem as strong tasting as Perfect 3 and I found the stripes blended in more (like in the pic above) once they were cooked. I still have some Chioggia seeds so will grow another line of them in the polytunnel....no point in wasting good seedIf I'm not on the Grapevine I can usually be found here!....https://www.thecomfreypatch.co.uk/

I steam almost all of my veg but will try roasting the chioggia this year and see how that goesIf I'm not on the Grapevine I can usually be found here!....https://www.thecomfreypatch.co.uk/

Sorry but I don't like that chioggia variety, grew some in my first year as well as Boltardy and the stripy things didn't taste very nice to me at all.
Grew only Boltardy last year and they were fantastic, have enough pickled sliced and baby beets for all this year.The day that Microsoft makes something that doesn't suck ...
... is the day they make vacuum cleaners

I got some Boltardy in a magazine the other week so I'll be growing those too Reassuring to know they have a good strong taste too!
My hubby Neil has always been a bit finicky about eating veg but absolutely LOVED last year's Perfect 3 beets, Little Gem lettuce and Gardener's Delight tomatoes. My challenge this year is to get him to add even MORE things to his Like ListIf I'm not on the Grapevine I can usually be found here!....https://www.thecomfreypatch.co.uk/

I see you've been buying veg boxes!
Good on you, its a wonderful way to try new things
Beetroots come in many colours and various shapes too.
There is a cook and eat section on this forum where we put recipes for the things that we grow that might help you too.
Another site that might be good is the riverford veg box one, they might be sending out similar combinations of veg as you are getting and they put cooking tips and recipes on their website.
And of course, we'll always tell you what we think about your veggies too (its just that we end up chatting about the best way to grow it rather than eat it in this section!
