Personally I wouldn't grow more than one row of tomatoes on each side of the greenhouse. But, I do grow peppers in pots up the middle as well.
To get more plants in, rather than putting the growbags flat, I stand them on end and cut them in half. Two advantages, the compost is deeper (tomatoes like deep roots) and if you get a "thug" it doesn't swamp the other plant(s) in the bag.
Oh, and I plant the cucumbers in the corners and train them up to the ridge and along.
