leaving beans to dry.....

Hello all

We went away for a week so obviously things were not picked I was thinking about the dwarf french and runner beans.... can I leave them to dry on the plant now pick no more fresh, maybe use over winter in stews as long as I dry them correctly? I am interested in growing drying beans next year just wondering if I can eat these?

Runner is a Scarlet Emperor
Dwarf/French Bean Tendergreen

If someone has tried, thinks it could be done shall I just leave the plants now when should I harvest the dried beans please?

I normally cut the bottom of my Scarlet Emperor and let them dry on the strings but harvest when dry and before they open and drop the beans and defiantly before the first frost for saving bean for eating as beans. They then go in trays and sit in the kitchen on top of the fridge freezer to dry out completely before trying to store. I found large envelopes and paper bags better than jars

Like Cad I dry the Scarlet Emperor beans I'm saving for seed on the plant, those I want for eating after picking I boil for 10mins then freeze, so they only need their final cooking time when I add them to chilli or stews.

Have a read a two-sheds post of cooking with dried beans and to be aware of toxins.

I leave all my beans that have gone over the top and use them dried in stews etc. Wait until the pods go yellow and soft then pick and shell them easier than when they are completely dry. Leave them somewhere dry to dry out properly and store them in paper. They can also ne used as seed for next year. Nothing wasted!
