Why is my PSB sprouting now?

Yup...I'm pretty sure tis the weather!
We had eaten most of ours before last Xmas, but then got a second flush in the spring.

Maybe you have Early sprouting - not late!
Not joking. There are different varieties to extend the season. Extra Early Rudolph starts in September.

I had 3 plants at the start of the year and 2 of them i got some broccoli from. The other one just kept growing and growing (leaves) and never gave me any broccoli at all. I only pulled it out a couple of weeks ago as it was massive and was starting to block the light out from some of my onions and leeks.

Goodness knows what happened there.

I've had a couple of cuttings from mine and it looks like theres more to come.

I only ever grow the old fashioned stuff, sow in April, harvest the following April. Did get one randomly sprout in about September one year but I blamed it on the weather. After the erratic weather this year I probably need to check as I normally ignore it for most of the year.
