I sowed mine much too early last year and they got very, very leggy. I left them be until early spring and then cut them back to around 3-4 inches - they grew back just fine.
Susie, netting might be helpful to protect against pigeons, though I've found a fleece isn't needed against frost (though that depends on variety I guess, I always sow aquadulce for overwintering).
