Personally I chit the following:
Potatoes
Peas
Parsnips
Sweetcorn

The method of Chitting I will use is wet paper towl in a container seeds on top and put the container on a windowsill and wait

How often should I spray the seeds

Also shall I plant as soon as roots develop ?

Just keep the paper damp and I plant out when the root is about a half to one inch long, depending on what size seed you're chitting
