    Hi Strider,

It is a bit tricky to store potatos for 7 months but after harvesting, place in the sun for two to three hours to dry, brush off the soil, do not wash until ready to use. If storage temperatures are too high, potatoes tend to soften and sprout, so ideally you are looking at about 45-50F. Store in a dark place such as a garage to prevent greening and layer between sheets of newspaper so if one spoils it will not spread to the whole lot, this is sometimes a problem if stored in bags or sacks.

I only store heirloom varieties not commercially avaiable as you may (and this has been debated on this forum) be storing up problems for future crops....you choice!
