Haricot Beans

Silly question . I know that Haricot beans are often grown so that the dry out on the plant and then harvested as dry beans but can they be picked and cooked like runner beans? That is, sliced when fresh and cooked?

Yes they can, Artisan, and some varieties are very good used that way. You could call them dual purpose. Others have more stringy or fibrous pods and aren't so good, especially when they get more mature, and are really only for drying. So you'd need to sample a few at different sizes and find out how good they are to eat.

Thank you Zelenina Thats great. The variety I have have are dwarf and are named Cocco Bianco. I'll be trying some with dinner tonight!!

I haven't tried that variety, but I've had one called Coco Blanc a Rames which could be similar but climbing. It was very good as flat green beans and makes nice chunky white dried beans.
