  • Leeks gone to seed

So a couple of my leeks have gone to seed. Can these still be eaten or should I just cut my losses and toss them on the heap?

They'll have a hard flower stalk in the centre. You can eat whats around the stalk and the sooner you use them, the more there'll be that's edible.

I find that if you cut the flower heads off and leave them they can grow again from the bottom and you sometimes get a small, soft and useable leek later in the year. Sometimes they get trapped inside the tough outer leaves and can get rather bent so if you see this happening tear the outer leaves to let the new growth out.
