    I picked all my Apache Chillis last night.
    Thought I would make some Chilli flakes with them.
    So this morning chopped off the stalks and cut in half.
    Roasted them in an oven at 100 deg C for an hour.
    They still didn't look dried.
    So gave them 45 mins at 140.
    Unfortunately they then looked a bit burnt.
    Wondered if still OK so popped half in my mouth for a test. Arggggggggh.
    Some were not too burnt so will flake them.

    Drying chillies I believe that low and slow is better, i.e. 24 hours on a low heat. The ones I've dried I just stick in the airing cupboard for a few weeks.

    Was the ouch from the chilli heat?

      Be careful with drying in an airing cupboard...check that the chilli is thoroughly dry as often if they've taken too long they can go mouldy in the middle.
      I only dry small or thin skinned chillies these day (and then they are usually used for Christmas decorations ) I prefer to use them from frozen or use them in a jam or chutney.

                No fallen for that before.
                Was chopping some chills a few years ago when it was a very hot summer.
                I was sweating a bit.
                Scratched the side of my head, not really near my eyes. But the sweat must have run it in.
                Had to stand in the garden with a bottle of water poring over eye.

                  I've never had much luck drying chillis so I do like Scarlet and freeze them, I'd really like a dehydrator.

                    turn them into paste that you can add to anything that needs zing, or spread on bread

                    about a pound of fresh red chillis (not green) add an onion and half a dozen cloves of garlic, blend to a paste, dash of olive oil in pan and fry paste for half an hour over low heat, store in jar in fridge for few weeks or freeze in ice cube trays

                      last year I dried a few by stringing them and hung them in the shed above the frezer ,they didn't turn into flakes but they where dry and easy to cut up . atb Dal.

                        I was preparing Cayennes, went to the bathroom and washed hands well both before and after, my eyes were watering that much I kept bumping into the furniture, I couldn't see where I was going for the tears. Shalln't be doing that again lol
