  • Oca - when to dig up?

Instructions say to dig up a couple of weeks after frost has killed foliage off . Only thing is, mine is still green and growing. Any ideas?

Probably due to the mild weather. Dig up one and see if the tubers are large enough and go on that. That's what I've done this year

Oca tubers start to form in autumn sometime near the equinox. I dig mine out in early December whether the tops have been frosted or not. I find that if left too long the slugs get at 'em. Here in the south any missed tubers survive the winter and start sprouting in late spring.
To improve yield try earthing up the top growth once it starts to go rampant in late summer.

I was there when Jay-el dug his up in early December. He had a good crop by all accounts.I don't grow it, but seeing his crop, I could be persuaded to in future.

I dug mine up early December, the tubers were too small to be of much use other than replanting next Spring (which is what I did last Spring....lol.... can you get decent sized tubers from small beginnings?) I suspect I don't give it enough growing space but I think I might just grow it as an ornamental in pots as the leaves are unusual, plentiful and last well into Autumn. I've read the leaves can be used in a salad but have never done that, anyone tried it? And what do the tubers taste like? (an accurate but unhelpful answer would be They taste like oca....")
